A slight deviation to the normal blog fayre. With all this time on my hands due to the current lock down situation I've been doing quite a lot of cooking, so here is the first easy recipe - "spicy fried rice with eggs". Serves a hearty meal for one person or a light snack for two.
Ingredients:
1 packet of uncle bens egg fried rice
1 red chilli, sliced
2 cloves of garlic sliced
2 teaspoons chinese five spice powder
1 small onion or shallot, finely sliced
1 carrot, finely sliced at an angle
3 slices of cooked ham, sliced (use tofu for a veggie option)
2 tablespoons of oil
2 tablespoons of water
Freshly ground salt and black pepper to taste
2 eggs
Garnish:
1 teaspoon chilli flakes
Light soy sauce
Method:
Heat a wok or large frying pan on a high heat until it starts to smoke slightly, add the oil allow to heat through for a minute or so. Add the carrots and onion or shallots and stir fry for 3 or 4 minutes until they start to take a bit of colour. Add the fresh chilli and garlic and continue to cook for a couple of minutes. Next add in the rice make sure you give the bag a good squeeze before opening to seperate it. Stir fry the rice for 4 mins then add the ham, add the water to stop the pan from drying out stir for a minute. Turn out on to a warm plate. Turn the heat down and add oil to the pan and fry the eggs, place the eggs on the rice and garnish with the chilli flakes and a little soy sauce. Enjoy....
